  • 2 1/2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 cup cold water
  • 16 tbs cool unsalted butter (or 2 sticks of butter, cut into pieces)


In a large bowl, combine flour, salt, and sugar and stir with a fork.

Add the butter to the mix - it's best to warm it slightly, not straight from the fridge.

Keep stirring and pressing (it's ok to use your hands too) until the mixture resembles a coarse meal.

Sprinkle in the cold water. Continue mixing until dough is slightly crumbly but if squeezed between your fingers will hold its shape. If necessary, add slightly more cold water 1tbs at a time, but no more than 1/4 cup should be needed.

Take the dough and form it into 2 pieces that resemble 3/4" thick disks. Place on plastic wrap and put into fridge for about an hour until firm.

**To be honest, I've made this recipe without refridgerating - it works quite well, just not as flaky, but I don't think anyone even noticed.
